Southover News Low Salt, Big Success
Southover Food Company’s biggest success this year has been, without doubt, the Grange Gammon range. Developed earlier this year to address increasing demand for healthier food products and to keep in step with FSA guidelines, the Grange Gammon was designed specifically to be a natural, consistent, low salt and reduced fat product. The curing process was specifically designed to use as little salt as possible without replacing it with numerous artificial additives. The result was an extraordinarily low salt content – 0.76g per 100g – with no compromise to flavour or quality. Quality and flavour are important, but as with any catering business, so is cost-effectiveness and a key element of this is portion control. With this in mind Southover chose to reform the joint by hand prior to cooking, using carefully selected cuts, in order to give a uniform face to the end product that would ensure excellent portion control during slicing. The Grange Gammon comes plain, smoked or honey roast, sliced or whole and is an affordable product that delivers on quality and flavour. This much has been evidenced by the product’s incredible success since its introduction. It is attractive to caterers because it is reasonably priced and extremely high quality, a combination that will win over almost anyone, but it goes beyond that to offer great portion control and an incredibly low salt content.
